Why is the loudness of a crisp’s crunch deliberately engineered?

Food scientists engineer the cellular structure of a crisp to maximise crunch volume. Louder crisps are consistently rated as fresher and crispier in blind tests, even when staleness is identical. The sound of breaking cells travels through the jaw and skull to the ear, and the ear contributes to the taste verdict. A crisp designed to be loud is a crisp designed to taste fresher, because the mouth defers to the ear on the question of crunch.

A consumer bites a crisp and hears a loud crunch. The crisp tastes fresh and satisfying. The consumer does not separate the sound from the taste, experiencing crunchiness as a single oral event, and does not realise that the loudness of the crunch — engineered into the product’s structure — is inflating the freshness perception the tongue alone would not support.

What is actually happening

Spence and Zampini’s research showed that amplifying the crunch sound of a crisp increases perceived freshness and crispiness, while attenuating it lowers both, even when the food is identical. The finding demonstrates that eating is a multisensory event where the ear contributes to flavour judgements typically attributed to the mouth. Manufacturers exploit this by engineering microstructure for maximum fracture noise.

Why it stays hidden

The hidden mechanism is auditory dominance in freshness judgement. The ear overrides the mouth on crunch: a louder fracture is a fresher crisp in the consumer’s experience, regardless of actual freshness. The manufacturer who engineers for sound is engineering for perceived taste, and the consumer’s satisfaction is partly a product of the noise the food makes, not the food itself.
