A restaurant split its thirty-item menu into three ten-item sections: starters, mains, and desserts. Average order time dropped by thirty-one percent compared to a flat alphabetical list of the same thirty items. The food was identical; the cognitive architecture of the menu was not.

Diners describe the sectioned menu as “easier to read.” They attribute the speed to visual clarity rather than to the cognitive reduction in comparison tasks. The categories feel like a natural structure, not like a decision-cost intervention designed to collapse the comparison set from thirty items to ten or fewer.

What is actually happening

Hick’s law states that decision time increases logarithmically with the number of equally probable alternatives. Categories reduce the effective number of alternatives by allowing the diner to eliminate an entire section before comparing individual items. Miller’s chunking research adds that grouping items into meaningful categories shifts processing from individual-item evaluation to category-level filtering, dramatically reducing the decision load.
