How does a fast track speed up drinking?

A bar switched from slow jazz to uptempo dance tracks at the same volume. Average drink duration dropped by nearly a third: patrons sipped faster, finished sooner and ordered again more quickly. The tempo had synchronised their motor rhythm — lifting a glass, tilting, swallowing — to the beat. The faster the beat, the faster the hand moved, and the faster the hand moved, the sooner the glass emptied. The bar sold more drinks per hour without raising prices or pouring faster.

Research on music tempo and consumption rate shows that faster music increases sipping speed and reduces meal or drink duration. Rhythmic entrainment — the involuntary synchronisation of motor actions to an external beat — drives the effect: the body matches its pace to the auditory environment, and faster tempo produces faster consumption without conscious awareness.
